The Levant is a region along the eastern Mediterranean, including Lebanon, Syria, Jordan, Palestine, and parts of Egypt and southern Türkiye. Its name comes from 'lever', meaning to rise, a reference to the rising sun in the east.
 
Food has always been central to life here. Cooking follows the seasons and is shaped by generosity, abundance, care, and craft rather than excess. Ingredients are respected and time is allowed to refine the flavours. Nothing is rushed.
